The REBIO restaurant in Brno is, by all accounts, the first organic restaurant in the Czech Republic. Its certification of organic quality assures customers that the ingredients used by the chefs to prepare the food are entirely organic. Rebio uses organic ingredients not only in vegetable and fruit salads but also in main dishes and beverages. According to the Czech Press Agency, the largest population of vegetarians in the Czech Republic seems to live in Brno, as the number of health food stores and vegetarian restaurants is greater than in Prague. Why? Brno has a large proportion of university students and an increasing standard of living.
